Judith Viorst once said, “Strength is the ability to break a chocolate bar into four pieces with your bare hands - and then eat just one of those pieces.” She could not have put it any better.
For ages, actually, forever, chocolate has been the source of indulgence. It has been energy at some occasions and pure pleasure at other. It’s been a tradition in some cultures and for some people, it’s but a luxury, “a poor man’s champagne” if you will. But it has been at the center of celebration and sometimes, if not consumed as chocolate in its purest form, it has manifested itself into pies and cakes, brownies and ice-creams; even bouquets.
For me, chocolate was a calling… it beckoned me to explore its nature and its science and I trusted my gut… I answered the call of chocolate.
It was a long time ago when I first tried some experiments with molten chocolate. I tried learning from some experts and went by the book when it came to some recopies that I was asked to try. But I was not satisfied… chocolate has no boundaries. It’s an ocean and every dive you risk, you will only find pearls. I then began my true love affair with chocolate.
Today, I have reached a stage where I know that no matter what I do with it, chocolate never goes wrong. And with that zeal and faith, I have been able to create, experiment and invent over 30 different flavors, shapes, textures and fillings with this divine food and I know this is only the beginning.
